Whether you work in the kitchen, in management or in service, in a cafeteria, in a restaurant or in a catering service, this training will improve your ability to meet the needs of people with gluten-related dietary restrictions.  

This training was developed by Coeliaque Québec, in partnership with the ITHQ hospitality consulting centre’s team. 

 This training course is intended for: 

  • Kitchen and service staff as well as managers of any establishment involved in the preparation or serving of food.  

The content of this training is designed for both food services (hospitals, long-term care facilities, schools, daycare centres, day camps, company cafeterias, etc.) and the restaurant services industry (restaurants, hotels, catering services).   


Objectives

At the end of this training course, you will be educated on the issues related to celiac disease and you will acquire the best practices to prevent gluten contamination at every stage, from the reception of goods to the serving of meals.

  • Gluten description and identifying gluten sources 
  • What celiac disease is, its impact and repercussions 
  • How to avoid cross-contamination  
  • Appropriate reaction to a gluten ingestion situation
